This cooking class will be led by our very own Veteran Participant/Volunteer, Jose Santiago. Jose was born and raised in Puerto Rico, and now currently resides in Colorado where he received a degree in the Culinary Arts from Johnson and Wales University and will now be joining us virtually to share his knowledge! Follow along, ask questions, and have fun cooking a meal together!
Together we will be cooking: One-Pan Mexican Quinoa
How it Works:
(1) Register online - to receive an email with the link to participate and cooking instructions
(2) Provide/Purchase your own ingredients
(3) PRIOR to event start time - prepare all ingredients (chop, drain, etc.)
(4) Event start - open your email and click on the link
Ingredients You Will Need:
1 Tablespoon | Olive Oil |
1/2 Cup | Yellow Onion *Diced* |
2 Cloves | Garlic *Minced* |
1/2 | Jalapeno *Minced* (amount depends on how spicy you want) |
3/4 Cup | Quinoa |
1 Cup | Vegetable Broth |
1 (15-ounce) Can | Black Beans *Drained and Rinsed* |
1 (14.5 oz) Can | Fire-Roasted Tomatoes *Diced and Not Drained* |
1 Cup | Yellow Corn |
1 Teaspoon | Chili Powder |
1/2 Teaspoon | Cumin |
1/4 Teaspoon | Salt |
1/4 Teaspoon | Ground Black Pepper |
1 | Avocado *Halved, Pitted, Peeled and Diced* |
1 | Lime *Juiced* |
2 Tablespoons | Fresh Cilantro Leaves *Chopped* |
