This cooking class will be led by our very own Veteran Participant/Volunteer, Jose Santiago. Jose was born and raised in Puerto Rico, and now currently resides in Colorado where he received a degree in the Culinary Arts from Johnson and Wales University and will now be joining us virtually to share his knowledge!  Follow along, ask questions, and have fun cooking a meal together!

Together we will be cooking: One-Pan Mexican Quinoa

 

How it Works:

(1) Register online - to receive an email with the link to participate and cooking instructions

(2) Provide/Purchase your own ingredients

(3) PRIOR to event start time - prepare all ingredients (chop, drain, etc.)

(4) Event start -  open your email and click on the  link

 

Ingredients You Will Need:

 1 Tablespoon  Olive Oil
 1/2 Cup  Yellow Onion *Diced*
 2 Cloves  Garlic *Minced*
 1/2  Jalapeno *Minced* (amount depends on how spicy you want)
 3/4 Cup  Quinoa
 1 Cup  Vegetable Broth
 1 (15-ounce) Can  Black Beans *Drained and Rinsed*
 1 (14.5 oz) Can  Fire-Roasted Tomatoes *Diced and Not Drained*
 1 Cup  Yellow Corn
 1 Teaspoon  Chili Powder
 1/2 Teaspoon  Cumin
 1/4 Teaspoon  Salt
 1/4 Teaspoon  Ground Black Pepper
 1  Avocado *Halved, Pitted, Peeled and Diced*
 1  Lime *Juiced*
 2 Tablespoons  Fresh Cilantro Leaves *Chopped*
